My recent meal of grits at Ubuntu was topped with agretti. Not cooked. Just tiny, thin sprigs. Looked like pine needles.

I got some from Marquita last year and I sauteed it - quite nice! Not sure about roasting though...it seems too delicate for that.

Those are all mouth-watering recipes. I will be trying Pickled Agretti tomorrow. I think I'll try to shoot it, but I don't think it will be as good as your picture!
