This is the second of (an estimated) three and a half roundups for IMBB#19 on the theme of "I Can't Believe I Ate Vegan". Food Bloggers from all over the world have taken part in this online community event to try and prove that purely vegetable-based food, without the addition of any animal products, can be transformed into tantalizing and tasty recipes that might even cause the most ardent meat eaters to beg for more. Thank you to everyone who took part. I hope everyone enjoys checking out all the imaginative recipes entered, as much as I did. Click on a photo that takes your fancy, or a recipe that sounds intriguing and start to discover the possibilities of what can be prepared as a vegan main meal.

Awww! You gals - you are making me blush. I have to admit - I have been feeling that some of the roundups have been getting long winded. Especially the one I did for Being Rachael Ray for the Day
It occurred to me that the main focus of these events is the recipe, not the bloggers themselves and i didn't want all the recipes to get lost in a muddle of blog names, locations and bloggers names.
Also - I didn't want readers discriminate against bloggers they'd never heard of by not following through the link because they were a blogger they hadn't heard of. )If that makes sense).
By doing the round up this way, every food photo speaks for itself, as does every recipe description. People follow the link of the recipes they like the look and sound of, instead of just visiting the food blogs they already know.
I hope people will discover some great new blogs in this way - there are certain lots of wonderful ones I had never heard of jumbled up in there.
Oh - and Kalyn - I was very nervous when I entered my first IMBB exactly a year ago. I thought there was a format I had to follow and I didn't know what it was. But in fact - you can do whatever you like, be creative within the boundaries of the challenge that is set. Just have fun with it.
As for the time issue - thats something I can't help you with. If you do find some time, maybe you could send some over to me!

The most inspiring thing is that not a single blogger resorted to a bowl of noodles with red sauce. What a creative bunch of people! Bravo to all.
