June is over - you know what that means!

The end of the month equals eggs and toast.

Poached Marin Sun Farm egg on a bed of Fatted Calf pancetta, ugly shiitake and button mushrooms, homemade bread croutons and minced parley. Oh yum.

  7. Ok you guys - its really easy.
    I just got two slices of pancetta and chopped it up small, fried it with handful of chopped button and shiitake mushrooms, one slice of bread, no crusts and cubed, until bread was crispy. Then I poached an egg and put it on the a bed of the fried stuff. Sprinkle with parsley and ground black pepper

    whole thing was about 10 minutes

    That looks faaaaab! I never do poached eggs for myself and I really don't know why as they're really yummy. Mmm. mushrooms & pancetta, count me in.
    Still comign up with an appropriate dramatic work to match my creation this month... Watch this space for details!
