On Perbacco's website I quickly found &lt;A HREF="http://www.perbaccosf.com/perbacco_restaurant.html" REL="nofollow"&gt;this page&lt;/A&gt; which states: &lt;I&gt;"Chef/&lt;B&gt;Owner Staffan Terje&lt;/B&gt; and Owner &lt;B&gt;Umberto Gibin&lt;/B&gt; have been sharing their passion for the food and wine of Italy with Americans for nearly three decades."&lt;/I&gt; Bingo! Now you have the names of the owners you can call the restaurant and ask to speak to them or alternatively write them a personal letter at the Restaurants address. Be warned however, I have tried writing to other restaurants and haven't a good response rate. I  have found that calling, although more difficult, for me who doesn't like phonecalls much, has a better chance of success. I usually try and call just before service begins  if I want to speak to someone like that because they are more likely to have the time to talk outside of restaurant service hours. Perbacco is not "my place" I am just a regular customer, like you, who decided to write a report of my eating experiences there.&lt;BR/&gt;&lt;BR/&gt;Even the best restaurants suffer from inconsistencies of service. New table cloth or bread sticks were not provided, but was given another salad. My main meal was very good but my husband was not. Can you compliment someone who merely sliced some meat?  Maybe...  Not sure if the salumi was made in house, actually. I think you're spot on about the pork sugo and the caramel gelato with black sea salt. Those are my two favorite things at Perbacco at well.
